This is actually a really good example of target-training. You'll notice that the goldfish touched his nose to a stick with whit mark at the end, and the trainer uses this behavior to encourage him to touch the football and swim through various obstacles. This is because he has been conditioned to associate food with touching the target, so he follows it around for his reward.

Proof that anything can be clicker-trained.
